duck duck goose…

This afternoon I am going to take a “duck” class offered by Kocurek Family Charcuterie. The class is described as “Everything Duck: Butchery of an entire duck, confit preparation, duck bacon secrets, stock, rillettes and more.” I’m hungry already and its not even noon!

I took a charcuterie class with them a few weeks ago, and learned quite a bit. These pictures are from that class, duck pictures to follow.
