Short and sweet this week, I promise. Sometimes the best meals are the simple ones shared with friends. These meals can be especially simple if you aren’t required to anything more than show up!
I was treated to lunch, and can say no more than yum… and thanks!
Funny thing is, I’d been dreaming about salmon and meant to pick up a nice piece at the store, but forgot! What a treat this “salad” was, made even better by the company of friends.
This summery looking fare was shared on the coldest day of the year here, and was just the right kind of hearty to fill the bill. Thanks again, my friends! Mmmm…
Finest Kind Salmon “Salad”
serves as many as you prepare for
per person:
1 nice piece of salmon
a good handful of baby spinach or other baby greens
sliced mushrooms
a few spring peas
chopped walnuts
some nice Parmigiano-Reggiano, crumbled
a nice balsamic vinaigrette
Set the salad, mushrooms, peas, nuts and cheese on each plate and dress. Set the cooked (grilled, broiled, baked or poached) salmon on top. Enjoy with good friends!

Perfect – as you say, simple is usually the best! And shared with friends… well that´s the icing on the cake! (Or the dressing on the salmon salad 😉 )
